POTATO, HOT SMOKED SALMON AND DILL SALAD

Dill is a dreamy match with both seafood and potatoes, so this easy salad has to be a winner.

750g–1kg new potatoes
salt
⅓ cup homemade aioli or a good quality mayonnaise
⅓ cup sour cream
⅓ cup fresh dill, chopped
zest and juice of a lemon
1 tbsp capers, chopped (optional)
150g hot smoked salmon

Simmer the potatoes in salted water until just cooked. Take off the heat, drain and cool.

Mix together the aioli, sour cream, dill and lemon zest and juice, plus capers if using. Mix dressing through the cooked and cooled potatoes then flake over the smoked salmon
