Ahipao’s Midwinter Mule

by | Jun 29, 2022 | At Home

Mules, or bucks, are cocktails made with ginger beer, ginger ale, citrus juice, and any kind of spirit. Easy to make and easy to sip, they strike that elusive balance between spicy, sweet and strong, and are some of the most popular cocktails around. As the winter months close in, this festive cocktail is perfect to enjoy in front of the fireplace with friends, or as a cheeky tipple in front of the bar heater to warm your insides after that cold trip home.

Ahipao’s Midwinter Mule

Ingredients
45ml New Zealand Vodka 42 Below
45ml Apple Cider
15ml Lime juice
90ml Ginger Beer

Garnish
Slice of Apple
Cinnamon stick
Cinnamon powder

Recipe
Add the 42 Below Vodka, Apple Cider and lime juice to a cocktail shaker.
Add a handful of ice to the shaker. Give the mixture a few vigorous shakes.
Transfer the mixture to a copper mug filled with crushed ice.
Top with Ginger Beer.

Garnish with a slice of apple and cinnamon stick. Sprinkle your mug with cinnamon powder!

Tip
Add 15ml of cinnamon syrup in your wintry cocktail, for a rich, fragrant, warm, and woody flavour.

Ahipao Eats

A short stroll from the ferry gets you to Ahipao Eats, a fully licensed café in the old Harbourmaster’s building at Matiatia Bay, overlooking the harbour. Here you find an all-day menu, fresh coffee or crafted cocktails. The bar offers a wide range of creative cocktail options for customers to sample while enjoying the relaxed island ambience.

Co-founder, Alannah Pfaff is committed to supporting local wherever possible – using fellow Kiwi-owned businesses for everything from produce to point of sale technology. Ahipao uses fresh ingredients that are ethically sourced from trusted local partners. The cafe also operates a compost system and only stocks soft drinks that come in glass. As part of the again again network to help reduce coffee cup consumption, Ahipao also uses edible takeaway cups from Twiice to further minimise their footprint. As you might expect in crafty Waiheke, there are also lovely cashmere garments to buy, thanks to the onsite knitwear factory.
